Tasting Notes: Spirit Hills is a local flower winery located just outside of Calgary in Millarville. Their wines are all made with the wildflowers of the Canadian Rocky Mountain foothills terroir that provide the nectar to begin the fermentation process. Like grape skins for traditional wine, flower petals are used to add both aroma and flavor to their wines. This technically makes the Spirit Hills flower wines a sub-category of mead by using honey nectar as the wine base but evolving it by using all of the wildflowers in contrast to using grapes. I was blown away with their six staple wines, Dande, Bonfire, Wild Rosy, Whitetail, and Yeehaa. Particularly Yeehaw! It is a sangria style flower wine made with dandelion honey, black currants, apples and cinnamon to create a sweet but jammy-rich red wine. Sweet cinnamon, sandalwood, apple pie and berries on the nose. On the palate you can taste the quality ingredients added in the making of the wine where the black currant is highlighted with the warmth of the cinnamon, making it taste like a cozy blueberry/blackberry pie. The sweetness is well balanced and the 13.5% ABV gives it plenty of body to pair with BBQ meats or to sip on its own. Great for Canada Day BBQs, enjoy!
